These quick vanilla cookies are light, buttery, and irresistibly delicious. They are perfect for tea time, dessert, or a quick snack, they’re easy to make and ready in less than 10 minutes!

Ingredients
  • ½ cup unsalted butter (room temperature)
  • 3 Tbsp olive oil
  • ½ cup powdered sugar
  • 1 Tbsp vanilla extract
  • 1 cup all-purpose flour
  • ¼ cup corn starch flour
  • 1 Tbsporange orange zest
Instructions
  1. Preheat the oven to 180 degrees Celsius
  2. In a large mixing bowl, cream together the butter, olive oil, and granulated sugar until it is nice and smooth.
  3. Next, add in the vanilla extract. Mix together until fully combined, light and fluffy.
  4. Add the sifted all-purpose flour, cornstarch, and orange zest to the butter mixture and use a wooden spoon to mix until combined. Finish this step off by hand. Give the dough a few kneads to make sure all the ingredients are fully combined.
  5. Then roll the dough into small balls and flatten them using your fingers.
  6. Place the dough rounds on a lined parchment paper, and bake for 10–12 minutes until they start to turn golden brown.
  7. Remove from the oven and dust them with powdered sugar.
